Chocolate Chip Cookies
makes about 20 large cookies

1/4 cup Crisco
1 stick unsalted butter, slightly softened
1 cup packed light brown sugar
1/2 cup granulated sugar
1 large egg
1 large egg white
2 teaspoons vanilla extract
2 cups plus 2 tablespoons all purpose flour
1/2 teaspoon baking powder
1/8 teaspoon salt
10 ounces large chocolate chips

Heat oven to 375 degrees.  Beat the Crisco and butter until pretty smooth.  Add the sugars and mix until well blended.  Add the egg, egg white, and vanilla and beat until smooth.  In a large separate bowl, whisk together the flour, baking powder, and salt.  Add to the batter and mix until smooth but don't over-mix.  Add the chips and fold in.

Line cookie sheets with parchment paper.  For large cookies, place heaping tablespoons of dough on the paper with 1 1/2 inches between.  Shape the dough quickly with your hand so that each spoonful is compact and not too spread out.

Bake for about 12 minutes, or until tops are lightly browned.  Turn pans halfway through baking ; do not overcook.

Slide parchment paper onto wire racks to cool.  Repeat as needed with fresh sheets of parchment paper.
